Indonesian Chicken Curry

Recipe from my Mom.

Ingredients

4 or 5 Chicken thighs, wings, drumstick, any part you like
1 can coconut milk (about 400-500 ml)
1 stalk lemon grass, pounded
2 kaffir lime leaves (it's very rare, i can't even find it in asian store. you can order online or substitute it with lemon zest)

Spice paste, to make the spice paste blend these following ingredients:
3 cloves of shallot
5 cloves of garlic
3 big red hot chili (you can find it in asian store, or you can substitute it with red jalapeno)
7 thai hot chili (this is very hot, use less if you want to make it mild)
3 Candlenuts
2 fresh turmeric or 2 tsp turmeric powder
1 cm Fresh ginger
Salt

Directions

1. Heat the oil in a pan, then saute the spice paste until fragrant.
2. Add in chicken, lemon grass, and kaffir lime leaves. Stir and cook for a few minutes.
3. Stir in coconut milk and cook until the sauce is thick and water level has resided.
4. Serve with jasmine rice.
