Ingredients
4-5 Chicken thighs, wings, drumsticks, any part you want (you can also replace chicken with fish)
2 or 3 cloves of garlic, sliced
1 onion, sliced
1 green bell pepper, diced
2 tbsp. corn starch, dilute in a little bit of water

Diced pineapple
Ketchup
Chili sauce (Optional)
Water

Sugar and Salt to taste
Directions
1. Marinate chicken with lime, garlic powder and salt then deep fry. Set aside. If you're using fish, you don't have to marinate, just deep fry it.
2. Saute the onion and garlic until fragrant.
3. Add in chicken or fish, bell pepper, ketchup, chili sauce, adequate amount of water, sugar and salt. Cook for a few minutes then add in corn starch and bring to boil.
4. Add in the carrots and pineapples. Simmer for 10 minutes.
5. Serve with jasmine rice.
