Roasted Vegetables


Ingredients
(You can use any vegetables you like)
Bell pepper (red, green, yellow)
Carrots
Onion
Egg plants
Asparagus
Mushrooms
1/4 cup Olive Oil
1/2 cup Balsamic Vinegar
2 tsp. Thyme Leaves
2 tsp. Rosemary Leaves
2 tsp. Basil Leaves
1 tsp. Pepper
1 tsp. Salt

Directions
1. Place vegetables in a baking dish. Add olive oil, balsamic vinegar, thyme, rosemary, basil, salt and pepper, tossing to coat well.
2. Roast in preheated 450 F oven 20 minutes or until vegetables are browned and tender.

Green bean Stir-Fry

Recipe from my Mother in law.

Ingredients
Green beans
Minced garlic
Soy sauce

Directions
Heat oil in a pan, add in minced garlic, saute for 1 minute, then add in green beans and soy sauce. Cook for a few minutes then serve.
